This drink is inspired by the olfactory journey of Illawarra Road, by the cracked pillars and plastic chairs in front of almost every home - all this mixed with the progressive spirit of 'Marrickvilla'.

So say Yassiou (or whatever you'd like) to Poor Toms x Baba's Place take on Ouzo. A distillation of Greek and Vietnamese culture which champions flavours of star anise, cardamom, pepper, ginger and so much more.

Inspired by a joint love of caffé tonic we've developed this once off collaboration product between ourselves and cult coffee heroes, Everyday Coffee. 'The Eye Opener' is the spirit for those who like to burn the candle from both ends and whose mornings and nights merge into one.

At 40% ABV this gin has everything you would expect of a Poor Toms Gin with the added benefit of Everyday Coffee's Rwanda Gitesi filter coffee - resulting in a big pine-y juniper upfront with complex spice and creamy milk chocolate across the palate, finished with bright notes of freeze dried raspberry and native strawberry gum.

Add to your morning coffee, drink in a Negroni or swap the vodka for Coffee Gin in your Espresso Martini.

The original. Our Sydney Dry Gin is unlike any other. You’ll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. An easy drinking gin - delicate, fresh, and floral. For more delicious results, serve with a strawberry.

Originally conceived to loosen the mood at family weddings, this Strawberry Gin is for all occasions! We steep fresh strawberries, young ginger, and hibiscus flowers in our Sydney Dry Gin - imparting a rich pink hue and fresh complexity. The addition of intensified cardamom and cubeb pepper distillates, elevate the delicate sweetness of the strawberry.

The most controversial tropical incursion into our fair harbour since the docking of the Ruby Princess. Pineapple and coconut – infamously hard to distill –  on an unprecedented paradise sojourn with juniper, lime, pandan, nutmeg, allspice, and many more. If a young George Clooney had spent his gap year in Ibiza, it would taste like this.

Not suitable for pedants or children, this concoction is for audacious gin drinkers who prefer their spirit strong and full of juniper. At 52%, Poor Toms Fool's Cut is a rich, classic, full-bodied gin with a whiff of grapefruit and an all-night-long liquorice/juniper finish. Perhaps best in an ultra-dry martini with an olive, a thirsty G&T, or shaken into a Last Word. Garnish with anything - this gin can handle it.

This sticky situation involves a cornucopia of 25 obscure herbs and outrageous fruits both steeped and distilled, native and internazionale. The ensuing calamity is a fresh, herbaceous frenzy that’ll make you forget whether you’re coming or going.

Hibiscus, marjoram, navel orange, seville orange, mandarin, rhubarb, fennel, fresh beetroot, marshmallow root, coriander seed, wormwood, strawberry gum leaf, allspice, gentian.
